Whole Wheat isn't all that it is cracked up to be, because of the gliadin protein that had been modified in 1953.
They modified the protein in the wheat because they wanted more fluffier breads and pastries. So we as a nation (now the world) pay for it in becoming overweight. Alternative flours, like brown rice, coconut, or ancient grains like spelt, amaranth, millet, and kamut are good but pancakes will look like they did in the first century A.D. Flat, and no fluff. But they taste good especially smothered in bacon with real maple syrup. Yet don't forget the eggs easy over. I also have to mention quinoa, which isn't exactly a grain but a seed. Which has some amazing qualities and quinoa flour is also available.

Dr. E. Bacon... whenever you are involved in a discussion of any topic, you have a way of making "bacon" part of the conversation... me-thinks you have a bacon addiction....
