Cajun's probably not PC, either.
Okay, I bought some wine. The 4 pack. If I go to hell, Ferd and CC1 get the blame!
I couldn't find Paul Prudhomme's Blackened whatever, all I could find was his Poultry Magic. Hopefully it works as well.

Use emeril's seasonings. I even use his recipes for seasoning blends.

1 tablespoon paprika
3/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
dash cumin

The blackened cajun seasoning I found at my Super Wal Mart was the Zatarain's brand.
When this runs out I am going to use the recipe someone posted on here for making your own with the various spices.
You can compare the spices in that poultry magic to that recipe for blackened seasoning to see if it is similar. If not you could probably add the ingredients missing.

They had one of his 'blackened steak' spice, and it was nearly the same as what I bought, so I think it will work.

OH MY GOODNESS!!!! This stuff is GOOD!! I made it this evening. It's a definite keeper! Yum! The sauce is so good.
If you like artichokes, you could add them to the dish, and it would taste just like something they serve at the Cheesecake Factory.

Cool. I rank it right up there with the top three of four meals I have ever cooked. I think I am going to make it again this weekend.
