Barb's Easy Peach Cobbler

2 boxes Pillsbury Pie Crust
3 lg. cans peaches w/heavy syrup
Not quite 1/2 cup white sugar
Not quite 1/2 cup brown sugar
1 teaspoon vanilla
2 tablespoon butter
Cinnamon

In saucepan: drained peaches, sugars, butter, vanilla, a lot of cinnamon. Cook just long enough to melt butter and mix in the sugar.

In a 9x13 glass Pyrex: place 2 crusts so they overlap, pour in mixture, cover with remaining 2 crusts. Pinch edges to seal crusts, cut slits in top crust.

Bake @ 350 until golden brown...about 1 hr. 20 min. depending on your oven and how well done you want your crust.

Serve with vanilla ice cream...

Barb this looks good. If you drain your peaches what makes your juice?

That nearly 1 cup of combined sugars, girl...you wouldn't believe the juice!! I have to put a cookie sheet on the shelf under it because it often runs over..

Pecan Pie

• 1 cup Karo Dark Corn Syrup
• 3 eggs (beaten)
• 1 cup sugar
• 2 Tablespoons melted butter
• 1 tsp vanilla extract
• 1 ˝ cups pecan
• 1 unbaked 9” deep dish pie crust

Preheat oven 350

1. Stir the first 5 ingredients thoroughly using a spoon.
2. Mix in pecans.
3. Pour into pie crust.

Bake on center rack of oven for 60 -70 minutes. Cool for 2 hours. Store pie in refrigerator.

Tips: Pie is done when center reaches 200 F. Tap center surface of pie lightly; it should spring back when done. For easy clean up, spray pie pan with cooking spray. If pie crust is over-browning, cover edges with foil.

High altitude adjustments: Reduce sugar to 2/3 cup and increase butter to 3 Tbsp. Reduce oven temperature to 325.

Fresh Pumpkin Pie

2 Cups fresh pumpkin (1 pie pumpkin)
1 cup sugar
3 eggs, beaten
2 Tablespoons flour
3 Tablespoons butter
1 teaspoon pumpkin pie spice
1 9" deep dish pie shell

to prepare pie pumpkin: cut top off pumpkin, turn upside down in microwaveable dish - nuke 15 min. - test for softness - nuke 5 min - should be done by now. let cool and scrap out of shell - run through food processor til smooth - measure 2 cups.

Mix all listed ingredients - you can add more spice to taste. Pour into pie shell - bake at 350 degrees til pie is "set" - and lightly browned. Better if made a couple days ahead and refrigerated.

Pretty Much Any Pie You Want

Ingredients:

1 Chevy Trailblazer (many substitutions possible)
Gasoline as needed
Money as needed
1 Marie Callender's restaurant

Procedure:

Drive to Marie Callender's. Buy a pie. Drive home.

Serves one.
