Best idea so far.  Maybe not the most romantic, though....
Jeff and I were discussing rings the other day. A friend of ours bought his wife a $4000 ring, which she lost, so he replaced it with a $7000 ring. That one was stolen. Bad luck aside, we were shocked at the price since our rings were very modestly priced. The first set we bought was $250 TOTAL. LOL!!!! And at the time, I thought that was expensive. I was so proud of that little ring. A couple of years ago, my watch and rings disappeared (I'm hoping they were just misplaced and that I'll find them some day--I am very sentimental about those cheap little rings), so Jeff bought me a new ring. We found a nice one on sale at Helzberg for around $700. Perfectly adequate, in my opinion.
Said all that to say...after our friends left our house, I turned to Jeff and said, "If you ever buy me a $7000 ring, I will make you take it back and buy me a new kitchen instead."
A gun would be a close second to the kitchen.
ETA: Jeff's wedding band got too tight and couldn't be stretched any further, so I bought him this one earlier this year--he LOVES it:
