So if we Broider this: "hair is given to her in place of a veil", ( "a mantle around the body, a vesture" ) will it still cover the woman like a mantle( "something thrown around" ) ?

The greek word peribolaion denotes:
1) a covering thrown around, a wrapper
a) a mantle
b) a veil
So a mantle or vesture is something that covers the wearer like a wrapper. If the hair is broidered, the hair that is given in place of a veil would not be covering the woman like a mantle that would be thrown around the body.
Instead the hair would be twisted on top of the womens head. Would the woman still be covered by her hair, would she be wearing her hair like a mantle or wrapper?
I have to conclude that the woman would not be covered.
