I guess my question really is, at what point does Matt 5 kick in. Is it only if you are preaching at the time you are assaulted?

Brother, I believe dying during the course of ministering the Gospel is a very honorable way to die. Sister Alvear has lots of stories of God delivering her and her family members during their time as missionaries. I don't have any stories of Him doing something like that for me, but I have seen Him put a fire out instantly. Still doesn't mean I've gotten rid of every fire extinguisher and smoke detector from my house.
In fact, if y'all are as serious about praying over every single situation that could cause your death, then I suggest you not wear the seatbelts in your car, disconnect the airbags and anti-lock brakes, cancel your homeowner's insurance, and take all the locks off your windows and doors. Afterall, you have enough faith to say without a doubt that God is never going to let you die at the hands of a madman. If He is going to do that for you, then surely you will never get hurt in a car accident, home fire, or ever have anyone break into your home either.
