It is VERY hard to have a garden here in the north. You need a greenhouse. I hope to get one for this summer. I did put up a LOT of vegetables last summer that we bought at a local produce stand for next to nothing. Makes me wonder if gardening here is worth all the trouble, when I can get such great veggies down the street and can them.
Have you ever tried dehydrating? I was listening to a lady speak about the fact that with dehydration that you keep about 80% of the nutrients, while in canning, you lose about 80% of the nutrients!
It is just that dehydrating is so time consuming, which is why we haven't tried it.
