So how would we explain the blind girl who never saw anything while alive describe what she saw after during her near death experience?

Amen.
Simple. I'd chalk it up to evidence that the soul lives on and is consciously aware after death. Any other explanation would require a great deal of complexity.
Soul sleep and Annihilationism is simply Christian Materialism; they deny anything they can't see or study materially. They also fail to realize that the OT doesn't contain a consistent hermeneutic on the afterlife. Jesus, being God, was able to comment on the subject. Those with the Holy Ghost (an immaterial Spirit) dwelling within them, revealing truth to them, were also more qualified to comment on life after death. The concept of death was a shadowy mystery to those in the OT. Those who believe in soul sleep and annhilationism have to graduate to NT revelation.
